Strawberry Cucumber Juice

My breakfast this morning…

Ginger

Half crate strawberries (from farmer’s market)

A few chunks of papaya

Handful of kale

1 cucumber

Chia seeds

I put it in the juicer in that order. It was sooo delicious! It was very sweet and refreshing! 

Spaghetti Squash Meatball Bites (GF)

The original recipe can be found here, but I changed it up a bit. I recommend checking it out. :D

Grass fed ground beef

2 tbs mixed Italliam herbs

Red peper flakes

cooked Spaghetti squash

Olive oil

Organic spaghetti sauce

Mix the herb, red pepper flakes, and meat together; pack into bite size balls.

Put olive oil in a pan at med-low heat, and fry the meatballs for a couple of minutes on each side.

Set oven to 350. Put cooked spaghetti squash in a mini muffin tin, making an indent for the meatballs. I put a tiny amount of sauce in each before adding the meatballs.

Bake for 20minutes.

SOO yummy! And great for a work lunch/snack.

Update on my Elimination list

I had discovered that what I was really allergic to in hummus was NOT the chick peas, but soy oil. It was added to most every kind I used to eat. Trader Joe’s sells some amazing tasting hummus without the soy oil. 

Just wanted you guys to know, so in that is the only thing in the list that has changed!

Oh, and I am able to eat eggs when baked with a type of flower, not by themselves. Though, I do tend to stay away from them being baked in foods regardless. :D

Rosemary Potatoes (grilled)

I thought I had already posted this on here, but apparently not. These potatoes are super delicious, and super easy.

Fingerling potatoes

Onion

1 tbsp Earth Balance buttery spread

Dried Rosemary

Salt and pepper

I cut the potatoes into about 1/4 an inch thick slices. I then chopped the onion into medium chunks. I threw both into some tin foil with the butter and seasonings. I cooked it on low heat on the grill for 30-45min ( or oven at 375) AMAZING!!

Left-over Chicken Deliciousness

I had purchased a rotisserie chicken from Whole Foods this past weekend (garlic and herb).  I ate all the breast meat on handmade tortillas and chipotle hummus from Trader Joe’s, amazing BTW! I needed to use up the dark meat and this is what happened..

Extra Virgin Coconut Oil

Avocado

I shredded the dark meat of the chicken and put it in a pan with the honey, seasoning, and oil.  I added the rice later and the water when needed to prevent the food from sticking. I ended up mixing in avocado after I took it out of the pan, and it was amazing!!! Enjoy :-)

Margarita Pizza

Today I was craving a more simple light style pizza! What better than Margarita pizza??

1 Kinnikinnick GF personal size pizza crust

Extra virgin olive oil

Red onion

Tomato

1 clove of garlic

Fresh basil leaves

Daiya mozzarella shreads

I put the olive oil down first instead of sauce, then the cheese. I placed the toppings on top in this order: basil, tomato, onion and then garlic. Put in the oven at 375 for 15-20min. There ya go! Super yummy pizza.

Berry Lemon Sunrise

Today’s morning juice has gotten this fancy name due to color combo and also what fruits are in it.

Handful of blackberries

Handful of raspberries

Half a container of strawberries

Two lemons

3 stevia packets

I put them in the juicer in that order. It looks cool and tastes great. It was very tart, but refreshing! I was thinking it would be better with fresh ginger, but sadly, I was out. :-(

Healthy Trail Mix

The previous picture shows what actual brands/products I use. You can use any cariety you like for this.

3 of the cacao goji cubes

7 or so banana slices

1/2 handfull of pinenuts

1/2 handfull of granola

I cut the cubes into forths because they anr just too big for me to chew. I then put all ingredients in a baggie to be able to munch on as a nice snack at work. Much better than a bag of chips.
